When the pandemic hit, we were forced to close my Banh Mi Café in Dublin city. We scraped together enough money to buy a griddle, a fryer, a smasher and Dash was born. My brother and nephew helped me paint and a carpenter friend built some counters. My partner created the Dash Burger brand identity and we opened with just two staff. The last roll of the dice…
In 2022, we began collaborating with fine dining chefs. We joined forces with renowned chef Niall Davidson to create one of the most talked about burgers in Dublin – The Shittake Miso Butter Smash. This was a truly original burger, unique to anything on the market at the time. Irish Beef with an aged flavour profile and deep umami notes. The OG Dash Special.
Later that year I had a call with George Motz who was coming to Europe for his World Tour 2022 and he wanted to collaborate with us to create an event in Dublin. Wow. We couldn’t believe it! The event was a huge success, since then we have forged a great friendship which saw us visit him in NYC and plan more events in the future.
In the summer of 2024, we embarked on a trip to the UK to work with Robin Gill at his famous Darby’s restaurant. We created an incredible XO Smash and served hundreds of burgers to foodies in the capital of competition, London. The feedback was unanimous, it was a sensation.
Back home in Dublin we ended summer 2024 with another incredible event, a collaboration with George Motz, Guinness and Dash Burger. This is one we will never forget. At the home of Guinness, with queues around the block, our amazing customers got to hang out with George and drink Guinness. These events give our community the chance to experience a piece of culinary history alongside our modern interpretation.
Looking to the future, we plan to open more locations, slow and steady. We want to keep the consistency and grow with the right people.
